This is Miss Daisy, holding up a loaf of freshly baked Italian bread--my first attempt. I definitely got the crust right: between the pan of boiling water in the oven, a few steamy sprays, and an eggwhite wash, the crust was absolutely perfect, golden, chewy and crisp.
Inside was delicious: after reading several very similar recipes I kind of winged it and combined some ideas. A double rise (one in the machine, one on the counter) brought out a much nicer yeast flavor than I've ever gotten before. Still, the crumb was a little bit dense, and I know exactly why: I went for form over function and squeezed out too many air bubbles while trying to shape the loaf to be pretty. Hopefully with experience I can have the best of both worlds.
